A Table at the Edge of Miami

A nomadic restaurant, a glowing stone table, and an oceanfront terrace turned Art Basel into a slow moving dinner party.

For four days, sommelier and curator Luca Pronzato brought his nomadic platform WE ARE ONA to the newly opened Andaz Miami Beach hotel, collaborating with designer and artist Sabine Marcelis, José Andrés Group, SolidNature, and Bocci on a temporary restaurant that blurred the line between installation and meal.

Guests sat along a long, low stone table that ran parallel to the ocean. Designed by Sabine with SolidNature, the seven meter travertine piece and its matching bar were made from six different stones fused with color treated glass. The design extended her Beyond the Surface project, first shown during Milan Design Week in 2023, and shifted it into a relaxed coastal setting. At night, lighting by Bocci washed the structure in a soft gradient, so the whole space glowed rather than feeling like a typical hotel terrace.

José Andrés Group served a set lunch and dinner menu with Mediterranean-meets-Miami dishes such as cobia “pastrami” crudo with coastal rub and melon, Spanish octopus with hazelnut emulsion, and braised short rib with truffled potato purée paired with House of Suntory cocktails. The collaboration captured WE ARE ONA’s roaming model at its most distilled, using Art Basel Miami as a backdrop for an intimate, carefully staged encounter between food, design, and an ever-shifting guest list.
